Another commision 'Make it big and light' - bit of an oxymoron but..................
Challenge accepted. 260mm SF100 slightly convex stainless blade with a 'wa' Japanese style handle mostly in maple burl with brass and bog oak spacers - 236 grammes
This is one of the first fancy wood handles. Sandalwood, smells divine when you are working it but the dust is nasty if breathed in. The blade is 105WCr6, 2.2mm thick and you can see develops a lovely patina with use. We use this knife pretty much every day.
Paring knife with a Bocote handle, carbon steel
3 Stainless paring knives, awww, cute!
A Stainless Gyuto Made for Last Christmas (I gave you my knife and the very next day you blunted it)
Can a knife be TOOOO big? This one is getting there........
52100 steel hardened to 62 HRC, blade length 260mm, handle 150mm made from a single piece of Bocote. Symmetrical slightly convex grind, been working on this'n for months 😳
A Gyuto in105WCr6
Been trying a style with a lower profile, handle is made from a stave from a French oak red wine barrel (a barrique).
Seems to be sharp enough
One of the first handles made, this one from an oak wine barrel, like the way the wine has stained the wood so sandwiched the stain next to the tang.
