Pair Custom Stainless Gyuto (130mm) & Santoku (120mm)

These paired smaller knives are made from AEB-L hardened to 59-60 HRC.
Gyuto style blade is 130 mm long and the Santoku 120mm. Both are 2.2mm thick at the handle and 30mm wide.
The handles are bookmatched Cocobolo 110mm long.
The blades have been symmetrically ground for right and left handed use.
They each weigh 90g.
