This chef's knife is made from AEB-L hardened to 59-60 HRC.
The blade is 85mm long, 2mm thick at the handle and 23mm wide.
The handle is bookmatched oak from a french wine barrel 110mm long with 2 brass pins .
The blade has been symmetrically ground for right and left handed use.
Weighs in at 62g.
